Pasta in Italy, cheese steaks in Philadelphia, tortillas in Mexico, grits in Georgia, fish and chips or Indian food in London (yes, Indian food in London….don’t ask, just run with me on that one, ok?), Cajun cooking in “Nawlins,” or barbecue in Memphis (or was it Kansas City? Or Texas?).
Proximity matters.
If something does not feel, look, taste or sound quite right, maybe we’ve moved too far from the place we need to be.
